My Grandma’s Herring Salad feeds 6-8 people. It is quite simple and very, very good.
Ingredients:
- 750g of Herring fillet
- 300g of sausage meat
- 3 sour apples (Granny Smith)
- Mayonnaise
- 4 Gherkins
- Cranberries
- 4 Boiled potatoes
- 1 Onion (grated)
- Sour Cream
- A jar of capers (optional)
Directions:
- Mix the following to make a marinade: mayonnaise, Cranberries, sour cream, Capers (if you are using them) and onion. The Cranberries add the colour to this recipe (note no Beetroot)
- The other ingredients are to be cut into cubes and then stir in the marinade. Ideally let is sit overnight in the fridge to allow the flavours to properly mix.
